After a long and prosperous
career in the restaurant/resort industry in Colorado, Lara moved
to Chicago to be a part of the "big" restaurant
scene. She landed a job at Bistro 110, and to her surprise, woke up one day a year later and decided that she could no longer
manage a restaurant that served meat.
After meeting with Mickey and
Jo, she joined the Diner team back in '96. She had finally found
a restaurant that she could feel morally comfortable working in.
Throughout the years, Lara has spread her wings and attempted to
go back to her original roots of fine dining, but has returned
due to her strong belief in vegetarianism, and love for the Diner. She has grown with us as we watched
her get married (an event that the Chicago Diner catered) &
become a mother.
Her first child, Kaitlyn Brooke,
was born on November 13, 2002.
